Almond-Chili Dukka Seasoning
Dukka is a condiment that is made of ground nuts, seeds and spices. It can be as spicey as one wants by changing the amount of hot pepper. It can be sprinkled on rice, pasta, potato, on salad or added to olive oil to dip bread in.
Ingredients:
1 cup of lightly roasted almonds (chopped)
1/2 cup sesame seeds
1/2 cup cumin seeds
4 tablespoon cumin powder
1/4 cup of coriander seeds
4 tablespoons of coriander powder
1,2,3 or 4 teaspoons of chili pepper (any dried spicey pepper will do)
1-2 teaspoons of salt flakes
Carefully roast the cumin and coriander seeds until you can smell the rich aroma of the spices. A cast iron pan is perfect for this. This is a dry roast, no oil.
Place the spices into a food processor. Pulse until they are finely ground. Add the almonds and the sesame seeds and salt flakes. Pulse again until the mixture is the correct grind for you.
Use as you wish. This is a culinary delight with many health benefits. Enjoy.
Juniper Blend
This aromatic spice blend can be used as a rub for meat, if you eat meat, but also as a rub for corn on the cob or other vegetables before roasting or as a rub for tofu before you sauté it. The aroma will lead your senses to the proper use for you. Enjoy!
2 tablespoons of juniper berries, very, very lightly pan roasted.
1 tablespoon of black or white peppercorns
1 teaspoons of salt
1-2 teaspoons of chili pepper (your preference of spicey level)
1 tablespoon of fresh rosemary, or bay leaf or oregano
8 minced sage leaves
3 minced garlic cloves
Grind the first four ingredients in a grinder until finely ground.
Chop the fresh herbs very fine. Mix the ingredients together and let them sit for a little while. You can add this to oil or you can us it dry.
